VEGETABLES  -  SALADS
MEXICAN SALAD  - Jolene Mershon
1 head lettuce
1 medium onion
2-3 medium tomatoes
1 #303 can Ranch style beans, drained & washed
1 cup grated Cheddar cheese
3/4  to 1 pkg (medium size) regular Fritos (crushed)
3/4 bottle Kraft Catalina Dressing

Prepare lettuce, tomatoes & onion as for any tossed salad.  Drain & wash Ranch Style beans & add to salad.  Add grated cheese.  Chill before serving.  Just before serving, add Catalina Dressing and crushed Fritos.

Makes enough for a crowd.  Can be halved or fourth for less people.  Also can substitute any chili style bean for the Ranch Style beans.

AUNT NED'S SPECIAL CORN

10-12 large ears of fresh corn
bacon drippings
cream

Cut corn off cob. (Not too close to the cob.) Scrape the cobs to get the milk from the corn.
Heat 1 or 2 Tbsp. of bacon grease in a large skillet. (She used an iron skillet.)  When it is hot put the cut off corn in and stir frequently until it changes color.  If it browns a little that doesn't hurt, just be sure to not burn it.  Add about 1/4 cup cream.  Salt and pepper to taste.  Heat until hot and enjoy.

I have never perfected this recipe to taste like Mother's.  This is approximately the way Mother fixed her corn.  All of her brothers, sisters, nieces, nephews and of course her kids and grandkids always wanted her to fix this.  
She would serve it with fried chicken (that she caught, killed, cut-up and prepared), fried okra and potatoes, black-eyed peas, canteloupe, fresh tomatoes, corn bread and large glasses of sweet iced tea.  Usually she served something chocolate for dessert.  She was a chocoholic from birth.  She always said when they came home from school they always had chocolate pie, chocolate cake, chocolate brownies, or chocolate pudding.  Wonder why some of us have weight problems. (ha)
FRUIT SALAD  - Julia Welch
1 can Libby's chunky mixed Fruits ( approx. 17 oz)  or
    coarsely chopped fruits of your choice
1 pkg. frozen strawberries ( 10 oz) drained
1 pkg. Jello Vanilla Instant Pudding Mix  ( 3  3/4 oz )
(May use Lemon instant Pudding mix if a more tart flavor is desired)
1 whole sliced banana
Gently mix all ingredients together and leave in refrigerator overnight.

CHAMPAGNE SALAD -  Marie Rogers
8 oz. cream cheese
3/4 cup sugar
1 large can pineapple tidbits, drained
1 medium carton Cool Whip
1  10 oz pkg frozen Strawberries, with juice
1/2 cup chopped nuts
2 bananas, sliced
Combine sugar & cream cheese in a bowl.  In another bowl, put pineapple, strawberries, bananas, nuts and Cool Whip.  Mix gently but thoroughly and add cheese mixture.  Put in large salad bowl to serve, but may be frozen - all or part of it.
